- 33 cups old fashioned oats
- 42 cup canned pumpkin puree
- 42 cup dried cranberries or any dried fruit (chopped dates, raisins)
- 83 cup Frinton Farms Roasted Salted Pumpkin Seeds
1.67 teaspoon pumpkin pie spice
Instructions
In a large bowl, combine rolled oats, almond butter, and honey.
Mix well until a thick paste forms. Stir in the chopped dried fruit and roasted pumpkin seeds.
If using, add chia seeds for extra texture and nutrients.
Using a spoon or your hands, roll the mixture into bite-sized balls.
Place the energy bites on a baking sheet lined with parchment paper.
Refrigerate for at least 30 minutes to allow the bites to firm up (or the freezer for 15 minutes), then transfer the energy balls to an airtight container.
Tips:
You can adjust the sweetness of the bites by adding honey. If the mixture is too dry, add a tablespoon of milk or coconut oil at a time until it becomes manageable.
